Today I have a special green post to share with you about one of my favorite breakfast recipes!
I want to start off by saying that I am NOT an expert in cooking, not even a little bit. In fact, if a dish takes more than 15 min. to make, it’s unlikely that I will make it for myself. With that said, I always get so much inspiration from food blogs and just salivate as I read their posts.
So I thought I would write my own basic breakfast post and a dish that I love to make if I have 15 min in the morning! It’s also soooooo easy to make this dish, you barely need a stove… (Just to boil the egg). More importantly, it’s a filling breakfast that will surely keep you full until lunch!
1 large egg
2 slices of toast (whole wheat, preferably)
Pepper (fresh ground is preferable)
Half of a ripe avocado
1 tablespoon of extra-virgin olive oil
Bring water to boiling point in a pot and place the egg inside.
Cut your avocado in half and thinly slice it, once you have your avocado portion ready freshly squeeze lemon on top.
Toast your bread slices and spread olive oil over them as generously as you wish.
When your hard boiled egg is ready, thinly slice it and place it on top of the toast.
Place avocado slices on top of the boiled eggs.
Top off everything with some fresh ground pepper and enjoy!!
